Chances are you might have quite a bit of leftover ham and hard boiled eggs from Easter. Host for Cooking for Dads, Rob Barrett stopped by to explained how to make Green Eggs and Ham Salad, which is perfect for Easter Leftovers.
2 cups finely chopped ham
2 hardboiled eggs, finely chopped
3 large spoonfuls mayo
1 Spoonful honey mustard (Sonny’s)
1 small handful chopped radishes
1/4 C pulverized broccoli
In medium bowl combine ham, mayo, mustard, radishes, avocado and broccoli, stir to combine. Add egg. Gently stir until coated. Add more mayo as needed. Serve as a sandwich, a melt, on crackers as an appetizer, in lettuce leaves, or any way you want.
