Funnel Cakes

Our Minne Sorta Fair is wrapping up – just as the fair would have been this coming weekend.  Baking instructor Nancy Burgeson shows us how to make a fair themed treat at home with her recipe for funnel cakes.

FUNNEL CAKES-makes about 6 large cakes

2 large eggs-lightly beaten
2 cups milk-2% or whole
1 tsp vanilla
3 cups all-purpose flour
¼ cup granulated sugar
1 tbsp. baking powder
¼ tsp salt
Oil for frying
Powdered sugar for trim

Note:  other toppings can be used for trim as well.  Drizzle chocolate over the top. Whipped cream and fruit are also yummy.  Or be creative and come up with your own ideas!

Prepare oil in deep-fat fryer or a heavy-duty skillet.  Heat to 375 degrees.  If oil is not hot enough the cake will absorb too much oil making it very greasy and soggy.

In a large bowl, place eggs, milk and vanilla and stir until well blended.

Combine dry ingredients and add to liquids mixing until smooth.

Use a glass mixing cup or any other tool that has a spout and measure in about 1/2-3/4 cup of batter.

Pour batter into hot grease moving in a spiral motion and overlapping so cake will hold together.

Fry about 4 minutes on each side or until golden brown.  Use a tong to flip cake.

Drain on paper towel and sift powdered sugar on while cake is still warm
