Flaky Cheesy Bread

Which do you prefer, cheesy bread or flaky croissant like bread. Now you can have both!  Cooking for Dads host Rob Barrett shows us three different ways of baking flaky cheesy bread.

777 g bread flour
2 sp salt
4 sp sugar
3 sp EVOO
5 sp active dry yeast
1 stick butter cut into cubes
377 gms water

Directions:

Combine all dry ingredients in a large bowl.

Cut butter into 4ths and then into cubes, stirring every so often so the cubes don’t stick together.

Add water and knead for 7 minutes.

Place in bowl, cover with plastic wrap, poke a hole in the plastic and let rise for 1 hour.

Take out and cut into 3rds. Roll into balls and set aside.

There are 3 options for baking.

Option 1. The French option.

Roll balls into french loaves and place on baking sheet. cover with plastic and let rise for 45 minutes.

Cut slits across the top and bake at 450 degrees for 15 minutes or until golden brown.

Remove and let cool.

Option 2: The Cheesy option

Take one ball and roll it out into a large rectangle about 1/4” thick.

Cover with soft butter, sprinkle with garlic salt and Parmesan cheese.

Roll up dough into a long tube. Bring opposite ends together so it forms a circle.

Press ends together.

Place on baking sheet, cover with plastic and let rise for 45 minutes.

Cut slits in top and bake at 450 for 15 minutes or until golden brown.

Internal temp should be 160 degrees.

Option 3: The Flakey Cheesy Option

Take one ball and roll it out into a large rectangle about 1/4” thick.

Cover with unsalted butter.

Fold over in half, then in half again, then in half again.

Wrap in plastic wrap and place in refrigerator.

Let is rest for an hour. (Go do something fun)

Take out and repeat. (optional)

Roll it out again into a large rectangle about 1/4” thick.

Cover with soft butter, sprinkle with garlic salt and Parmesan cheese.

Press ends together.

Place on baking sheet, cover with plastic and let rise for 45 minutes.

Cut slits in top and bake at 450 for 15 minutes or until golden brown.

Internal temp should be 160 degrees.
