Fair Inspired Recipes

When you think of the state fair, you think of food on a stick.  There will be no Minnesota State Fair this year to enjoy those favorites but that doesn’t mean you can’t try making them at home!  Becky Church from The Minnesota Beef Council shares two recipes that were inspired by the fair.

Corn Dog Recipe

(Recipe from tasteofhome.com)

1 cup all-purpose flour
1/2 cup yellow cornmeal
1 tablespoon sugar
3 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon paprika
Dash pepper
1 large egg, lightly beaten
1 cup evaporated milk
Oil for deep-fat frying
12 wooden skewers
12 hot dogs

In a bowl, whisk the first 8 ingredients. Whisk in egg and milk just until blended. Transfer batter to a tall drinking glass.

In an electric skillet or deep-fat fryer, heat oil to 375°. Insert skewers into hot dogs. Dip hot dogs into batter; allow excess batter to drip off. Fry corn dogs, a few at a time, 2-3 minutes or until golden brown, turning occasionally. Drain on paper towels. Serve immediately.

 

Pizza on a Stick

8 ounces beef
2 cups whole fresh mushrooms
2 cups cherry tomatoes
1 medium onion, cut into 1-inch pieces
1 large green pepper, cut into 1-inch pieces
30 slices turkey pepperoni (2 ounces)
1 tube (13.8 ounces) refrigerated pizza crust
1-1/2 cups shredded part-skim mozzarella cheese
1-1/4 cups pizza sauce, warmed

Directions

Preheat oven to 400°. In a large nonstick skillet, cook sausage over medium heat until no longer pink; drain. When cool enough to handle, cut sausage into 20 pieces. On 10 metal or wooden skewers, alternately thread sausage, vegetables and pepperoni.

Unroll pizza dough onto a lightly floured surface; cut widthwise into 1-in.-wide strips. Starting at the pointed end of a prepared skewer, pierce skewer through one end of dough strip. Spiral-wrap dough strip around skewer, allowing vegetables and meats to peek through. Wrap the remaining end of dough strip around skewer above the first ingredient. Repeat with remaining dough strips and prepared skewers.

Arrange kabobs on a baking sheet coated with cooking spray. Bake 10-12 minutes or until vegetables are tender and pizza crust is golden. Immediately sprinkle with cheese. Serve with pizza sauce.

 

Waffle Wild Rice Blueberry Burger

1 lb. hamburger
½ cup blueberries
½ cup cooked wild rice
1 tbsp. fennel seed
½ tsp garlic powder
1 tsp coriander
Pepper to taste
Mini toaster waffles
Maple or blueberry syrup

Mix together raw hamburger, blueberries, cooked wild rice and spices. Form into mini burger patties and grill until internal temperature of 160 degrees is reached. Take burgers off grill and let set. Toast mini waffles. Layer skewer with mini waffle, then burger, then waffle. Optional: add smear of cream cheese or peanut butter for savory flavor and creaminess! Serve on a stick and drizzle with blueberry or maple syrup.
