Ingredients
Pork Chops
4 ea Pork Chops ¼ – ½ inch thick (bone in preferred)
1 Tsp Himalayan or Sea Salt
Twist Fresh Black Pepper
Cilantro Lime Dressing:
¼ cup Fresh Lime Juice
¼ cup Good Olive Oil
¼ cup Cilantro
TT Salt and Pepper
Instructions:
Mix all ingredients for Cilantro Lime Dressing together and set aside.
Fire up the grill to medium-high
Salt and Pepper your meat on both sides well!
Place pork chops on grill for 4-5mins
Then flip and cook another 1-2 minutes.
Pull chops off the grill and generously drizzle with cilantro lime dressing.
Cover and allow to sit another 10 minutes.
Then serve!
Fresh Corn, Tomato and Basil Salad
Dressing
3 Ears of Fresh Corn
Grape or Cherry Tomatoes
¼ cup Basil
1 ea Juice of fresh lime
1 Tbsp EVOO

Instructions:
Slice fresh corn off of the ears into a medium sized bowl.
Then quarter the cherry tomatoes add to the bowl with corn in it.
Tear or chiffonade the basil and add to bowl.
Squeeze the juice of one whole lime and add EVOO to the mix.
Add salt and fresh ground pepper to taste.
Mix it all together and serve!
