Cooking for Dads host, Rob Barrett returns to Twin Cities Live with a tasty meal idea.
1 lb boneless, skinless chicken thighs
1/4 C Roasted Garlic seasoning (or favorite seasoned salt)
1/4 C brown sugar
fresh ground pepper
1/2 cup mayonnaise
2 spoonfuls Sriracha
1 sp honey
2 C cooked rice
2 spoonfuls coconut oil
handful of coconut flakes
1 sp Roasted Garlic Seasoning or garlic powder
pinch of salt
pinch of sugar
Mix brown sugar and roasted garlic seasoning together in a small bowl.
Add a little fresh ground pepper.
Liberally coat both sides of chicken thighs with mix.
Set aside for 15 minutes.
Mix mayo, Sriracha and honey together.
Mix rice, coconut oil, coconut flakes, garlic seasoning, a pinch of sugar and a pinch of salt together.
Grill or fry chicken over medium high heat for 3 minutes each side or until completely cooked.
Place chicken over rice and dollop the sauce on top.
