Baker Nancy Burgeson has a recipe that will round out your barbeques this summer.
CRAZY KRISPIE ROLL-UPS
¼ cup butter or margarine
1 10-ounce bag mini marshmallows
5 cups Rice Krispies or any other small sized cereal such as Peanut Butter and Cocoa Pebbles, etc.
1-1/2 cups marshmallow fluff
½-1 cup crushed graham crackers
1 cup melted real chocolate (chips or other chocolate) (your choice, milk, semi-sweet or combo of both)
14.8 x 10.6 inch jelly roll pan or a pan similar in size with low sides
1/2 cup small candies such as mini M&M’s or other candies but be sure to use very small candies or roll up will not cut well.
Melt chocolate and set aside
Melt butter and marshmallows in microwave or stove-top in a small pan.
Stir in cereal.
HINT: lightly buttered fingers or wetting fingers with water will help with distribution of marshmallow, cereal mixture.
Carefully spread Marshmallow fluff over all. HINT: if Marshmallow Fluff is too hard to spread you can soften slightly in microwave BUT DO NOT MELT!
Sprinkle crushed graham crackers over top of all pressing down slighty.
Drizzle melted chocolate over all and spread carefully over graham cracker.
Add small candies of your choice pressing in to chocolate.
Beginning at long end of pan, roll up into a tight firm roll. Wrap in parchment paper and refrigerate about 1 hour. Cut roll into 1-inch thick pieces.
