Chickpea Salad with Homegrown Sprouts

Ingredients:

1 can chickpeas (or 2 cups cooked chickpeas)
1/2 cup diced celery (about 2-3 stalks)
1/4 cup diced bread and butter pickles
1 tablespoon lemon juice
1/2 teaspoon salt
pepper, to taste
2 tablespoons mayo
Handful of sprouts or microgreens

Instructions:

  1. Drain and rinse the chickpeas. Place in a large bowl and mash with a potato masher or the bottom of a jar.
  2. Add the rest of the ingredients and mix together.
  3. Enjoy this on it’s own or in a sandwich! Lettuce and avocado are a great addition to your salad or sandwich when it’s time to eat!
