Monday Night Meal: Plant Based Stir Fry

When it’s the start of another busy week, our goal is to set you up for success in the kitchen. Fitness Expert and Owner of The Warehouse, Nickie Carrigan stopped by to make a plant based stir fry.

2 TBS Roasted Garlic
2 TBS Peanut Butter
2 TBS Garlic Coconut Aminos
1 bag Cruciferus Crunch Mix from Trader Joe’s
2 cups pasta of Organic Brown Rice & Quinoa from Trader Joe’s
or option to swap out for Cauliflower rice
2 cups of frozen peas

How to make it:
Boil pasta and use the directions on the back of the bag.
Sauté peanut butter, roasted garlic and garlic coconut aminos.
Add Cruciferus Crunch Mix and frozen peas.
Add pasta to the vegetable mix.
