Porkapalooza Home Edition: Pork Loin 3 Ways

The Minnesota Pork Board is serving up recipes that you can make at home.  Tim McCarty, the Executive Chef for the Mayo Foundation House in Rochester is grilling up a pork loin and making three dinners out of it.

Mojo Marinate

¼ cup Lemon Juice
¼ cup Lime Juice
¼  cup Orange juice
6 clove Garlic, minced
1 TBSP Cumin
1 TBSP Oregano
1 TBSP Cracked Pepper
2 TBSP Kosher Salt
¼ cup Sugar
1/3 cup EVOO

Mix together and save

Bone in center cut pork loin:  Coat the outside of the pork loin with ½ the Mojo mix and put back in cooler for 2 hrs.  Get your grill set up to cook with indirect heat. If gas grill, 1 side high 1 side low. If it is a charcoal place the charcoal just on one side of the grill. Place loin on the Low heat side and moving and turning it so it cooks evenly. Brush with some of the Mojo mix cook until it get to 140 degrees, pull off the grill and rest on the counter for at least 30 min.

Coffee BBQ Ribs

Pork Rib
½ cup Strong Coffee
½ cup Brown Sugar
½ cup White wine vinegar
4 cloves Garlic, minced
1 TBSP Cracked pepper
½ cup BBQ Sauce

Put everything into a small sauce pan on Low high and simmer 20 min until thicken.  Meanwile lay the pork loin on its side and fillet the ribs off, leaving about a ½ inch of loin meat on. Set the loin aside and cool. Put grill on med high, glaze the ribs with some of the sauce and place over the heat. All you are going to do is caramelize the BBQ both sides and pull from the grill and eat.

Tampa Cubano

Mojo Pork, Sliced
Ham, Sliced
Hard Salami, Sliced
Swiss cheese, Sliced
Pickles, Sliced
2 loafs Cuban Bread
Butter, Melted

Mustard Mix:

2 TBSP Yellow Mustard
2 TBSP Dijon Mustard
2 TBSP Mayo
1 TBSP Pickle relish

Mix all together for the spread on the bread. To build the Cubano cut the bread in half the long way. Remove ½ the bread inside, brush with butter and toast, cover inside of bread with Mustard mix. Start with the bottom piece Swiss cheese, pickles, salami , ham, Mojo Pork, and  Swiss cheese then the top of the bread. Brush with butter and grill both sides with weight on top, slice and eat


Mojito Pork Salad

1 ½ lb Pork loin, strips
1 each Avocado, strips
½ each Red onion,  Strips
1 cup Pineapple, diced
1 cup Tomato, diced
½ cup Radishes, sliced
¼ cup Manchego Cheese
2 heads Romaine, ½ heads or chopped

Mojito Vinaigrette

½ cup Lime Juice
¼ cup White wine vinegar
½ cup Honey
¼ cup Stock
¼ cup EVOO
1 ½ Tbsp  Corn starch
3 Tbsp Fresh Mint chopped

Place the first 4 things in a small sauce pan over med heat , thicken with cornstarch, remove from heat cool add EVOO and mint. Arrange the salad and all the toppings add dressing and eat

All of the recipes are for 4 people and can be made from just the loin or ribs grilled as just ribs
