Asparagus and Mushroom Risotto
4 cups chicken stock-warming
1 TB butter
1 onion
1 C arborio rice
black pepper to taste
1 tsp Dynamite Herbs
1 TB butter
1 TB fresh lemon juice
1 C mushrooms, sliced
1 lb asparagus, snapped into smallish pieces
1/2 Parmesan cheese
In large pan, melt butter add onion and cook until mostly translucent.
Add arborio rice and cook a few minutes until toasty. Sprinkle in Dynamite Herbs and black pepper.
Stir in 1 C warm stock. When almost absorbed, add another C and carry on with that method until rice is almost tender.
In small pan melt 1 TB and quick saute asparagus and mushrooms with 1 TB lemon juice. When cooked, stir into risotto, sprinkle Parmesan on top and serve!
