MATTERbox Kid Chef – Black Bean & Corn Pasta Salad

MATTER is teaming up with our Summer Harvest for Kids campaign. They’re using their MATTERbox program to provide healthy meals and recipes to families at hospitals. They have a new “Kids Chef” campaign, where Minnesota kids work with local chefs to create recipes. Owain stopped by to show us his Black Bean & Corn Pasta Salad. Ingredients

  • 3 cups whole wheat penne
  • 1/2 teaspoon salt
  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 (15 oz.) can whole kernel corn, drained
  • 1 (15 oz.) can crushed tomatoes
  • 1 cup diced queso fresco or other mild farmer’s chees
  • Optional: chopped cilantro, diced avocado, chopped red pepper and/or finely diced onions

Directions 1. Bring 5 cups water to boil, add whole wheat penne to boiling water cooing until tender – about 8 minutes 2. While pasta is cooking, prepare the rest of the salad. 3. In a large bowl combine black beans, tomatoes, corn, and cheese. 4. Once pasta is cooked, strain noodles and set aside to cool. 5. Once pasta is cooled add onion, lime juice and salt into mixing bowl. Dish up & enjoy! Shopping List
