Chef Tim McCarty prepares a Pan Sear Salmon using the fresh salmon from Superior Fresh.
Pan Sear Salmon
6 oz Salmon Fillet
2 Tbsp Extra Virgin Olive Oil
¼ tsp Sea Salt
¼ tsp Cracked Black Pepper
1 tsp Lemon Zest
Salt and Pepper fillet, add oil in a HOT pan (Med-High Heat). Place fish in pan cooking 1 ½ min each side or until golden brown. Cook internal temp 140 Med Rare to Med max. Finish with Lemon Zest.
Arugula Basil Pesto
½ cup Baby Arugula
½ cup Basil
1 Tbsp Roasted Garlic
2 Tbsp Toasted Pumpkin Seed
2 Tbsp Grated Parmesan Cheese
½ tsp Sea Salt
½ tsp Cracked Black Pepper
¼ cup Extra Virgin Olive Oil (more if you like thinner)
With a sharp knife chop Arugula and Basil, put everything but oil in food processor. Pulse as you add oil, cover tight.
Wilted Gem’s
2 each Gem’s cut in ½
½ Tbsp Extra Virgin Olive Oil
Pinch Sea Salt
Pinch Cracked Black Pepper
In a Hot sauté pan with oil (med-high Heat) place Gem in for 10 seconds, flip for 10 seconds, remove from heat. Salt and pepper.
