12 Days of Grilling: Jerk Short Ribs

We get a taste of the Caribbean in our 12 Days of Grilling presented by the Minnesota Beef Council. Tomme Beevas, owner of Pimento Jamaican Kitchen, prepares his short ribs recipe with a Caribbean twist!

Kill Dem Wid It Jerk Ribs

1 Slab of beef ribs
2 tbsp Crushed Pimento
.5 teaspoon Salt
1 tsp Black pepper
2 tbsp Crushed red pepper or Cayenne pepper
.5 tsp Cinnamon
1 tsp ground Ginger
1 tbsp all purpose seasoning, adobo and/or beef bouillon

Pimento’s MN Nice Sauce

Rub ribs with dry rub, then apply Kill Dem Sauce and allow to marinate overnight in refrigerator. Then right before grilling, lather (and relather) on MN Nice barbecue sauce and grill on low, indirect heat until meat is tender and easily removable with a fork. Afterwards, lather with more MN Nice Jerk Barbecue Sauce or Kill Dem Sauce while enjoying with a cold Red Stripe or favorite Jamaican beverage.
