Root Vegetable Spaghetti

Almond Crème:
1/4 cup chopped yellow onion
1 tsp chopped garlic
1 tbl olive oil
1 tbl white whine
1 tbl flour
1/2 almond milk

1/4 cup sweep potato noodles
1/4 cup carrot noddles
1/4 cup butternut squash noodles
1/8 cup julienne kale

Mushroom ragout:
1 1/2 roasted Roma tomato
1 cup sorted wild mushrooms
1 tbl olive oil

1. Combine all the Almond Crème ingredients in a sauce pan and bring it all to a simmer
2. Set aside
3. Bring pasta to boil and cook until it’s soft, then add in the kale
4. Stir together mushroom ragout ingredients and sauté them in a pan on medium heat
5. Toss together pasta with mushroom ragout and add almond crème on top
