Monday Night Meal: Sheet-Pan Shrimp Fajitas

Sheet-Pan Shrimp Fajitas
Serves 4

1 pound large raw shrimp, peeled, deveined, tails removed
1 onion, thinly sliced
1 cup corn kernels, cut from 4 ears, or thawed frozen corn
1 tablespoon olive oil
1 teaspoon cumin powder
½ teaspoon salt
8 corn tortillas
Optional toppings: salsa, sour cream, cilantro, lime juice, shredded cheese

Preheat oven to 400 degrees. Arrange sliced onion on baking sheet, and top with corn kernels. Drizzle with oil and sprinkle with cumin and salt.  Bake for 15 minutes. Remove sheet pan and add shrimp. Bake for 5 more minutes, until shrimp are opaque.

Remove from oven and serve piled onto corn tortillas, heated briefly in the oven or microwave. Top with desired toppings.

 

Sheet-Pan Pineapple Chicken with Rice
Serves 4

1 pound chicken breast, cut into 1” pieces
2 cups fresh pineapple, cut into 1” pieces
2 red bell peppers, cut into 1” pieces
1 tablespoon olive oil
1 teaspoon paprika
½ teaspoon salt
2 cups cooked white rice, for serving
Optional toppings: hot sauce, cilantro, scallion

Preheat oven to 400 degrees. Arrange bell peppers on baking sheet, and top with pineapple. Arrange chicken on top. Drizzle with oil and sprinkle with paprika and salt. Roast for 20 minutes.

Remove from oven and serve piled onto warmed white rice. Top with desired toppings.

 

Sheet-Pan Bursting Tomatoes with Pasta
Serves 4

2 pounds cherry tomatoes
2 garlic cloves, minced
1 tablespoon balsamic vinegar
1 tablespoon olive oil
1 teaspoon dried Italian herbs
½ teaspoon salt
Cooked pasta, for serving
Optional toppings: fresh basil, parmesan cheese

Preheat oven to 400 degrees. Arrange tomatoes on baking sheet, add garlic, balsamic, olive oil, herbs, and salt. Use your hands to toss everything together until tomatoes are coated. Roast for 20-30 minutes, until tomatoes are bursting.

Remove from oven and serve over warmed pasta. Top with desired toppings.
