Cooking with “Mamma Mia!”

“Mamma Mia!” is entertaining audiences at the Chanhassen Dinner Theatres through September 28th, 2019. The show features 22 songs from the musical group ABBA and is a toe-tapping delight for anyone who’s looking for a fun night out! Two of the stars of the show, Jessica Fredrickson and Aleks Knezevich play a couple on stage and they’re married in real life! They stopped by the studio to share a recipe inspired by the hit musical!

Sophie & Sky’s Greek Feta Spread

Ingredients

  • 4 oz. Greek Feta
  • 4 oz. cream cheese
  • 2-3 cloves of garlic
  • 3 oz. roasted red pepper
  • 1 red hot pepper (seeded) (use ½ to whole depending on heat preference)
  • ½ oz. Olive Oil
  • Pita chips or bread

Preparation

Place the garlic, roasted red pepper and hot red pepper in food processor with ½ oz. olive oil. Blend well until you have a red liquid mixture. Next add in the cream cheese until it becomes red and thereafter, the cubed feta cheese. If it doesn’t blend nicely, add a little more olive oil. Garnish with fress parsley and spread on toasted pita bread or pita chips of your choosing.
